Instructions

  2. Add the cumin, oregano, paprika, coriander, and turmeric, and cook, stirring, for 1 minute.
  3. Add the carrots and bell pepper, and cook, stirring, until the vegetables are softened, about 5 minutes.
  4. Add the lentils and broth and bring to a boil. Reduce the heat to low, cover, and simmer until the lentils are tender, about 25 minutes.
  5. Stir in the tomatoes and parsley, and simmer for 10 minutes. Season with salt and pepper, to taste.
  6. Serve hot, garnished with parsley, if desired.
